We have created this blog as a way to register our favorite recipes. We started trying some of them in our School’s kitchen. Later we had the idea of bringing our favorite recipes to be shared. Now we would like you to read, learn and, who knows, try some of these delis.

Ratatouille

Ratatouille is a traditional French Provençal stewed vegetable dish, from Nice. The full name of the dish is "Ratatouille Niçoise".  Ratatouille is usually served as a side dish, but also may be served as a meal on its own (accompanied by pasta, rice or bread).


Ingredients:
- 1 zucchini, sliced
- 1 eggplant, sliced
- 2 tomatoes sliced
- Salt
- Black Pepper
- Olive Oil

Sauce Ingredients:
- 5 tomatoes, peeled and without seeds
- 1 garlic clove, minced
- ½ onion, minced
- ½ cup, olive oil
- Rosemary
- Basil
- Thyme
- Salt
- Black Pepper

Preparation:

Sauce:
- Heat the olive oil in a pot and braise the onion and the garlic.
- Add the tomatoes and let it cook for 5 minutes.
- Add salt, black pepper and the chopped herbs.
- Put everything in the food processor, until smooth.
- Put the sauce back in the pot and let it cook a little bit more, until it is creamy.


- Pour the sauce into the bottom of an oval baking dish.
- Atop the tomato sauce, arrange slices of prepared vegetables concentrically from the outer edge to the inside of the baking dish, overlapping so just a smidgen of each flat surface is visible, alternating vegetables.
- Cover the dish with a piece of parchment paper cut to fit inside.
- Bake for approximately 45 minutes, until vegetables have released their liquid and are clearly cooked.
- Have fun arranging the Ratatouille on a plate!


Juice Tasting

Healthy Juice I

Ingredients:
- 1 pineapple (medium size)
- 2 leaves collard green
- 3 lemons juice
- Powdered sugar (to taste)

Preparation:
- Mix ingredients in a blender.
- Strain and serve cold.


Healthy Juice II

Ingredients:
- 1 beetroot (medium size)
- 4 oranges

Preparation:
- Clean oranges and cut them in half crosswise.
- Place one half of the orange on the juicer, apply pressure and twist the fruit to remove the juice. The juice can also be removed by squeezing the orange by hand.
- Peel the beetroot and cut it in small pieces.
- Put the orange juice and the beetroots in a blender and mix until you get a homogenous juice.
- Strain the juice and serve. It is not necessary to add sugar.


Healthy Juice III

Ingredients:
- 1 red apple
- 1 papaya
- 2 glass cold water
- Ice
- Powdered sugar (to taste)

Preparation:
- Peel the apple and the papaya and cut them in small pieces.
- Put the fruits in a blender, add water, ice and sugar.
- Mix the ingredients and serve immediately.

Healthy Juice IV

Ingredients:
- 2 teaspoon sparkling water
- 2 teaspoon strawberries
- 4 tangerines
- 2 pears
- Powdered sugar (to taste)

Preparation:
- Peel the tangerines and remove the seeds.
- Mix in a blender, strain the juice and reserve.
- Mix the pears and the strawberries in a blender.
- Add the tangerine juice, sparkling water and sugar.

Melted Cookie

Ingredients:
- 1 tin, sweetened condensed milk
- 2-3 Tablespoons Nescau (or other "chocolate milk" powder - not cocoa)

Preparation:
- Combine the ingredients in a bowl and stir constantly.
- Continue stirring until you get a smoothie cream.
- Put it in small bows and put in the refrigerator to cool.
- Serve cold.

Chocolate Egg

-Ingredients:
- 200 g, dark chocolate
- 200 g, white chocolate
- one eggshell (for the mould)

-Preparation:
1) egg mould (eggshell)
- wash the egg, using water warmer than the egg, and dry it.
- With a sterilized long needle or small, sharp skewer, prick a small hole in the small end of the egg and a large hole in the large end.
- Carefully chip away bits of shell around the large hole until it’s big enough to accommodate the tip of a baster. Stick the needle or skewer into the yolk to break it.

- Shake the egg large-end down over a cup or bowl until the contents come out.
- Rinse the empty shell under cool running water and stand it on end to drain and dry.
- Cover the small hole with a tape.
- Be careful when handling the eggshel. It´s quite fragile.


2) Chocolate
- Break chocolate in small pieces.
- Melt the dark chocolate and the white chocolate in 2 different pans.
- Once melted, pour the dark chocolate and the white chocolate into the eggshell untill it is completelly stuffed.
- Let it cool for an hour.
- Remove the eggshell breaking it gently and the chocolate egg is ready to serve.

Fruit Smoothie

Ingredients:
-200 ml milk (whole/skimmed/semi-skimmed);
-1 tablespoon flour or soybean;
-1 fruit of your choice.

Preparation:
- Mix all ingedients in a blender;
- Serve with or without ice.

TIP: if you prefer, use more than one kind of fruit. It is delicious.

Salad

Ingredients:
- 2 Tomatoes
- 1/2 package, croutons
- 1 cup shredded mozzarela cheese
- Olive oil
- 6 ounce Rucola
- Pepper

Preparation:
Rinse and dry the rucola and the tomato.
Chop the tomatoes in small pieces.
In a salad bowl combine the tomato, the rucola and the cheese.
Season with pepper and olive oil.
Add the croutons and it's ready to serve.

Special Salmon

Ingredients:
-2 salmon filets
- soy sauce
- sliced chive
- 1 package, cream cheese (optional)

Preparation:
Grill the salmon filets over medium coals.
Add soy sauce and sliced chive and grill the 2 sides for 5 minutes approximately or until fish flakes easily with a fork.
Add cream cheese and serve (optional).
